Creamy Walnut Sauce Pasta

With the holidays quickly approaching, nothing makes more sense than the aroma of toasted nuts and garlic. This creamy walnut sauce takes all of 5 minutes and is so versatile. For this recipe, I pour the creamy sauce over a fresh pasta and top with toasted pine nuts and crispy garlic.

Other Uses For Walnut Sauce

While my first instinct for this sauce was to pour over a steamy linguini, it didn’t take long for me to devour the diversity of this sauce. This sauce allows for so much creativity. Add over your favorite roasted vegetables and top with freshly chopped herbs.

  • Roasted Cabbage (and all your favorite roasted vegetables)
  • Dip for raw vegetables
  • Use as a spread on toasted bagel (top with microgreens!)
  • Flatbread Sauce

This pasta/sauce is perfect for when the snow hits and your dreaming of the local Christmas Markets with chestnuts roasting on the open fire. Why not bring that comfort and image of gathering around an open fire while toasting ingredients- right to your kitchen.

This creamy walnut sauce only takes 5 minutes and is completely plant-based. Toasted walnuts are added to a plant-based cream cheese and parmesan and pureed until smooth. Sauce goes well over pasta noodles or roasted vegetables like cabbage.

Ingredients

Creamy Walnut Sauce

  • 1/2 Cup Walnuts, toasted
  • 1/4 Cup Plant-Based Cream Cheese
  • 1/4 Cup Plant-Based Parmesan
  • 1 Teaspoon Miso Paste
  • 1/4 Cup Oat Milk, sub any plant-based milk
  • 1 Clove Raw Garlic
  • Salt, to taste
  • Pepper, to taste
  • 1 Teaspoon Italian Seasoning

Creamy Walnut Pasta

  • 2 Servings Pasta Noodles, cooked
  • 3-4 Tablespoons Pasta Water
  • 1 Teaspoon Lemon Juice
  • 5 Garlic Cloves, thinly sliced
  • 1-2 Tablespoons Olive Oil, to fry
  • 2-3 Tablespoons Pine Nuts, toasted

Method

Creamy Walnut Sauce

  • 1)

    Toast walnuts over medium-low heat for 2-3 minutes.

  • 2)

    Puree all creamy walnut sauce ingredients in the food processor until smooth.  About 3 minutes.

Creamy Walnut Pasta

  • 1)

    Cook pasta and reserve about 3-4 tablespoons of the pasta water while draining.  Add creamy walnut sauce, lemon juice, pasta water, salt, and pepper.

  • 2)

    Heat olive oil over medium-low heat.  Toast thinly sliced garlic until toasted- about 2-3 minutes.  Remove from heat and drain on paper towel.

  • 3)

    Toast pine nuts of medium-low heat until golden.

  • 4)

    Top pasta with crispy garlic and toasted pine nuts.
