Pumpkin-Spiced Energy Balls

With fall in full force, this is the perfect time to play with energy balls. I am a huge fan of energy balls as a quick prepped breakfast. These are little rolled oat balls packed full of all your favorite fall flavors while including some energy boosting ingredients as well.

What to Add to Energy Balls

Energy balls are a great way to add in extra ingredients that contain nutritionally value to start your day off right. This is where I add ingredients like chai seeds, protein powder, or flaxmeal. You can add almost anything from your pantry into these bad boys, so feel free to be creative and not follow my recipe exactly.

  • Rolled Oats- Oats have many health benefits including weight loss, lowering blood sugar levels, and are among the healthiest grains on earth. 
  • Flaxmeal- Provides a good amount of protein, fiber, and omega 3 fatty acids.
  • Maple Syrup (or date syrup)- A great natural sweetener that is widely used as an alternative option to avoid the use of refined sugar.
  • Pumpkin Puree- Tis the damn season! And a great natural source of fiber.
  • Ripe Banana- Great way to use up your old bananas. I wait until its so soft that it’s falling apart.
  • Corse Sea Salt- Do not skip the sea salt! I repeat DO NOT SKIP the sea salt. The sea salt balances out the sweetness so flawlessly in any energy ball.
  • Spices- I chose nutmeg and cinnamon since we are creating fall balls!
  • Nuts- Crush up nuts like walnuts to give your energy balls an extra dimension. I always look forward to the bites with bit chunks of walnut.
  • Cacao Nibs or Chips- A great alternative to chocolate chips and great superfood they are the root of chocolate. They are one of the highest sources of magnesium in nature.

My favorite fall ingredients like pumpkin puree, cinnamon, nutmeg, maple syrup, and walnuts combined with rolled oats, ripe bananas and coarse salt. Topped with chocolate nibs and crushed walnuts. Refrigerate overnight and enjoy one each morning for breakfast.

Ingredients

Pumpkin-Spiced Energy Balls

  • 1 and 1/2 Cup Rolled Oats
  • 1 Ripe Banana
  • 1/2 Cup Pumpkin Puree
  • 1 Tablespoon Maple Syrup, or date syrup
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1 Tablespoon Flaxseed, optional
  • 1/2 Teaspoon Sea Salt, coarse
  • 1-2 Tablespoons Walnuts, crushed
  • Small Handful Cacao Chips, or chocolate chips/cacao nibs

Method

Pumpkin-Spiced Energy Balls

  • 1)

    Combine call ingredients by smashing together with your hands in a large mixing ball.  Create 6 large energy balls.

  • 2)

    Refrigerate overnight.  This step is necessary as the oats need time to soften.
