Getting creative in the kitchen in one of the joys of cooking and that is exactly where these Loaded Sweet Potato Nachos derived from. It’s great to have the same familiar dishes over and over again… it takes you back in time and wraps a warm fuzzy blanket around you. But often I am craving the unknown, some recipe that is simply concocted by scanning the kitchen in a game of Russian roulette and landing my gaze on a sweet potato.

How to Cut Your Sweet Potatoes

For these Loaded Sweet Potato Nachos, we need to cut our sweet potatoes pretty thin and uniform. Consistency in the thickness is key when preparing most dishes as it allows them to all cook the same.

  • Option 1: Use a knife and eye ball it the best you can. The cons of this are that they will come out thicker than we wish and not uniform.
  • Option 2: Use a mandolin. Mandolin is a handheld kitchen gadget used to slice things thinly. You can also adjust thickness (for this recipe I set to #2), so in some cases you are slicing potatoes so thin they are almost translucent. Once you get a mandolin you will wonder how you lived without. This is a great tool for making scallop potatoes too! Nacho Toppings

Again, this is time to get creative. I am a big advocate for using the things you already have in your produce drawer. Eliminating your food waste by making beautiful things with what you already have. In this case I had half a tub of left over Vegan Bleu Cheese crumbles, and I think these are so necessary for these Loaded Sweet Potato Nachos! I will link my brand.

Methods to Fry Sweet Potatoes

I am clinically obsessed with my Air-Fryer (thanks, mom). I use it almost everyday, so if you are on the fence about whether or not you would use yours- YOU WILL. For this recipe, you can also bake these in the oven. The crispiness isn’t quite as good, but what can I say, I have been spoiled with my air-fry the last year so I am biased. If you are still trying to decide which air-fryer is best for you, I can verify that the Ninja 6 in 1 is great.

  • Method 1 (preferred method): Toss in cooking oil and seasonings then air-fry at 400F for 8-10 minutes while flipping halfway. Fry sweet potatoes in batches while laying them in a single layer. Cool on a cooling rack when done.
  • Method 2: Toss in cooking oil and seasoning then bake at 350F for 17-20 minutes while flipping halfway. Cool on a cooling rack when done.

Ingredients

Loaded Sweet Potato Nachos

  • 2 Sweet Potatoes, thinly sliced
  • 1-2 Tablespoons Cooking Oil
  • Salt, to taste
  • Garlic Powder, to taste
  • Pepper, to taste
  • 2 Tablespoons Cilantro, chopped
  • 1 Avocado, sliced
  • 1 Jalapeno , sliced
  • 1/4 Cup Chives, chopped
  • 1/3 Cup Plant-Based Bleu Cheese Crumbles, link to my brand above
  • 1/3 Cup Barbecue Sauce, to top

Method

Loaded Sweet Potato Nachos

  • 1)

    Slice sweet potatoes thinly using a knife or mandolin (preferred method).  If using a mandolin, then slice on setting #2 with is second from the thinnest. You may leave the peels on.

  • 2)

    Toss sliced sweet potatoes in cooking oil, salt, pepper, and garlic powder.  Then air-fry at 400F for 8-10 minutes while flipping halfway. Fry sweet potatoes in batches while laying them in a single layer. Cool on a cooling rack when done.

    (Alternative baking method: Toss in cooking oil and seasoning then bake at 350F for 17-20 minutes while flipping halfway.)

    Build your nachos by adding toppings and drizzling with barbecue sauce.
